70% of participants were shown to have food reactions and of these, 60.5% reacted to wheat, 20% to yeast, 9.2% to milk, 6.6% to soy, and 4% to egg white. (9 participants reacted to two of the foods).
The authors also state "We therefore hypothesize that our IBS patients have a form of non–IgE-mediated atypical food allergy involving enhanced eosinophil and intraepithelial lymphocyte activation."

In this study, damage to the mucosa could be directly visualized as a result of exposure to the 4 commonly-allergenic foods that were studied. These people had "Irritable Bowel Syndrome", not Celiac, and 13 of 22 reacted to wheat, 9 of 22 reacted to milk, 6 to yeast and 4 to soy.
